Zesty Lemon Chicken

Looking to add a little zest to your chicken? Feeling weighed down by heavy sauces and cheese? This light and flavorful chicken is perfect for springtime and that bikini bod you've been working on!

Ingredients

  • 2 Chicken Breasts, sliced in half

  • 3 Tablespoons of Olive Oil

  • 1/3 cup of lemon juice

  • 1/3 cup of white wine

  • 4 Cloves of garlic, thinly sliced

  • Ground Pepper

  • Oregano

  • Sliced of lemon for garnish

 

Recipe

  1. Preheat oven to 400 degrees Fahrenheit

  2. Add olive oil and sliced garlic to a cooking pan. Cook garlic for 1-2 minutes until soft but not brown.

  3. Add in white wine, lemon juice, ground pepper and oregano. Turn off heat.

  4. Place chicken breasts in a baking pan, and pour mixture over top. Make sure the chicken is completely covered with the sauce and is "soaking" in the remainder at the bottom of the pan.

  5. Place in the over and cook for 15-20 minutes, or until the center of the chicken is completely white. The trick to cooking chicken is to make sure it is cooked all the way through without drying it out. Check often by cutting into one of the breasts, once it is cooked remove from heat. 

  6. Remove from oven, garnish with lemon slices, and serve.

 

Make a little extra sauce and serve over top whole wheat spaghetti. Drizzle the remaining sauce over both chicken and spaghetti! A quick, easy, and guilt free meal in less than 30 minutes.
