No Bake Oatmeal Bites

These oatmeal balls were a huge hit at a work meeting I had recently. I needed something quick, mildly healthy, and lots of it! I have been hearing a lot about no bake protein balls lately, but always shied away because I really do not like peanut butter which is required in most ingredients. So at 7 am yesterday morning I came up with my own Oatmeal Chocolate Chip bites. Soft, sweet, and the perfect amount of energy for any occasion.

Makes about 20
Time: 10 minutes
Freeze for 1 hour

Ingredients:

  • 2 cups of Rolled Oats

  • 1/2 cup of Flaxseed Meal (Chia seeds, or both!)

  • 12 oz of Almond Butter
    I have a confession here, having never bought almond butter, I grabbed the caramel flavor by mistake, and it was DELICIOUS! So feel free to play around with flavors, especially if you have a sweet tooth.

  • 1 cup of Dark Chocolate Chips (Vegan if you like!)

  • 1/3 cup of Honey
    Or enough to create a type of "dough" with the oats. Add extra as you mix in order to make the oats "sticky" enough to hold in ball shape

  • 3 teaspoons of Vanilla Extract

Recipe:

  1. Mix all ingredients in a large bowl and mix/knead until a dough like consistency.

  2. Roll into balls (add extra honey, if balls crumble)

  3. Freeze for 1 hour or overnight

  4. Remove and Enjoy! Pack as a treat for those midday or bring as a pre/post soccer game energy snack!
