Avocado-Deviled Eggs

I have always loved the idea of deviled eggs as a party plate or appetizer- however I have always hated the taste. Given the Millennial fascination with avocados - as well as my own- I wanted to blend the classic idea of deviled eggs with this new favorite. So for a recent get-together (okay- it was debate watch party, because apparently at this age or in this day & age that is what we gather around for fun) I tested this new recipe on my best critics- my friends. Nothing is perfect the first time, but I think these might be close! Give them a try at your next party and let us know what you think!

Makes: 10-12 servings  Total Time: 20 minutes

Ingredients:

·       8 Large Eggs

·        2-3 avocados (3 if on the smaller side)

·        1/4 cup of low fat sour cream

·        Garlic powder and black pepper to taste

·        1 Lime

·        Red pepper flakes & Flax Seed for garnish (or your favorite topping- maybe bacon?)

·        Piping bag (Disposable ones are available at ShopRite for under $3!)

Recipe

  1. Hard-boil eggs:

    1. Fill a large pot with water and gently add eggs

    2. Cook on high heat.

    3. Once the water is boiling, allow to boil for about 9 minutes. Remove from heat and allow to rest while you prepare the filling

  2. In a large bowl, beat together avocado and sour cream until desired texture. Should be smooth and creamy. I recommend adding sour cream one dollop at a time until the desired texture is reached- it is easy to overwhelm the avocado with sour cream

  3. Season with garlic powder and black pepper

  4. Squeeze in lime juice 1/2 at a time until desired flavor (this is to add flavor but also to keep the avocado fresh)

  5. Run cold water over the eggs to make sure they are cool enough to handle. Remove the shells and cut in half

  6. Carefully remove the yolks and set aside (Can be crumbled for a garnish!)

  7. Add avocado mixture to the piping bag and carefully pipe in the avocado mixture to each half-egg until filled.

  8. Garnish with red pepper, crumbled egg yolk, flax seed, or your favorite topping (crumbled bacon, paprika, etc)

  9. Mix your toppings to create a colorful plate, serve cold and enjoy!

Tips:

  • It is very easy to damage the hard boil eggs either in the peeling process, halving, or removing the yolks. Plan ahead and make a few extra to account for this possibility (2 of my eggs were not usable- but they were still delicious!)

  • Avocado when left to the air can brown easily even with lime juice added. The recipe does not take long so I would recommend making just before serving to get the longest table time!
