Avo Toast

What would a good food blog be without putting our spin on one foods of the last 5 years? Avocado Toast can now be found on almost any brunch menu worth its salt, but you don’t have to go out to get some. And I would argue, its often better when made at home. Most places that serve Avocado Toast in bulk need to buy their avocado in bulk. Anyone who has bought more than one avocado at a time, understands the struggle of trying to use all of avocados before they turn brown. So restaurants get around this sad fact of life by using preservatives making the avocado mushy or hard, and never as fresh as you want. So what’s the answer? Bring the brunch menu home and whip up the best avo toast I have yet to try! OK- I may be a little biased, but you be the judge!

Serves: 1                                 Prep Time: 15 minutes

Ingredients:

·        1/2 an Avocado

·        1 egg (hardboiled in the picture, but make your favorite!)

· 1 piece of toast (I love Whole Wheat Sourdough)

·        1-2 tablespoons of flax seeds

·        Black Pepper

·        Garlic Powder

·        Crushed Red Pepper or Paprika

Recipe

***If you are making hard boiled eggs put those on first since they take a few extra minutes

  1. Scoop out half of your avocado into a bowl. Add black pepper and garlic powder to taste (usually 1-2 teaspoons)

  2. Mash the avocado until it is the perfect texture

  3. Toast your bread

  4. Make your egg*
    If you made a hard boiled egg, run it under cool water, peel, and slice. My other favorites are sunny side up or poached - both of which can be done in a few short minutes

  5. When your toast is finished, spread the avocado on top. Lay your egg on top. Add crushed red pepper or Paprika for a kick and 1 tablespoon of flax seed for an extra crunch.

  6. Enjoy!

Tips:

  • I love having a few hard-boiled eggs in my fridge at all times for a quick snack, to mix in with a salad, or to top off my avo toast without having to wait for them to cook.
