Cilantro Lime Rice
Ever in the mood for a burrito bowl from one of your favorite spots but without all the sodium or the extra cost? Have some of the ingredients at home and think this time you can perfect the recipe? Go for it! I’ve been here and there has always been something missing, most notably from the rice. So here is a secret that can help you get all that flavor packed into the base of your favorite bowl. Cilantro Rice! Check it out and let me know if you ever go back to eating rice plain again!
Serves: 2 Cook Time: 30 minutes
Ingredient Options:
· 1 cup of long grain white rice
· 1-2 cups of Cilantro leaves
· 2 cloves of garlic
· 2 pinches of cumin
· 1 small Jalapeno
· 1 Lime
· Olive oil
· Salt
Recipe
1. In a small saucepan cook your 1 cup of rice in 1.5 cup of water. Salt generously. Bring to a boil then reduce heat and simmer until cooked.
2. While your rice cooks, place cilantro leaves, garlic cloves, olive oil, 2 pinches of cumin, and the jalapeno in a blender. Add a small amount of water and blend until liquid consistency.
3. When rice is fully cooked, remove from heat and allow to rest for 3-5 minutes.
4. Fluff with fork and mix in cilantro blend.
5. Stir with juice from 1 lime.
6. Sprinkle with excess cilantro, plate with your meal or as the base of your favorite burrito bowl!
Tips:
If you are spice-averse, leave out the jalapeno; you will still get all the flavor without the heat!
Stores well for 3-5 days in the fridge.
Also great in a burrito or taco. I love to add corn, chicken, and avocado!
